3. Light Eggnog

If you’re longing for a classic glass of eggnog without all of the calories, look no further. This non-alcoholic version is tasty and satisfying and comes in at only 304 calories per serving.

  1. To make, add 4 cups of unsweetened almond milk, 6 egg yolks, 2/3 cup of raw honey, 1 teaspoon of ground nutmeg and ½ a teaspoon of cinnamon to your blender.
  2. Mix well for about one minute. Pour mixture into a saucepan and add 1 tablespoon of whole cloves.
  3. Cook the eggnog over medium heat for 10-15 minutes, or until it thickens. The goal is to have your mixture become hot without reaching a boil. If it starts to simmer, simply remove your pan from the heat and stir it well before putting it back on the burner.
  4. Once the eggnog has thickened, remove from heat and stir in 1 teaspoon of vanilla extract.
  5. Strain the mixture to remove the cloves and then refrigerate for a minimum of six hours. When serving, top each beverage with a sprinkle of cinnamon and nutmeg.
